Quinoa Breakfast Bowl

This breakfast is a win on nutritious values. The coconut cream is an excellent source of fats, the quinoa or brown rice is protein and carb-rich, topped with antioxidant fruits like blueberries and strawberries, and nutrient-dense granola.

See shopping options down below for dairy-free and gluten-free options.

Ingredients:

¼ cup quinoa (if you are super sensitive to gluten replace with brown rice)

1 tablespoon Coconut Cream

1/4 cup Organic Grass-fed Plain Greek Yogurt

1/4 cup Granola

1/2 cup Fresh Fruit that is in season and organic. Right now most places have organic blueberries and strawberries.

Directions??

Place the cooked quinoa on the bottom of the bowl.

Mix the granola and coconut cream together and add on top of quinoa

Top with yogurt and then add fruit on top

Garnish with mint or basil

Go Raw

Sprouted grains are often easier to digest, especially for those of us that have digestive issues. When grains sprout, they help break down phytic acid (a natural plant compound that gets a bad rap for blocking mineral absorption). When grains are sprouted a few things happen:

1. It helps unlock their nutrients and make it easier for us to absorb them during digestion and

2. When seeds are sprouted before you eat them, it starts a “pre-digestion” phase, breaking down the starches found in seeds. So, when looking for good granola or even bread, looked for sprouted grains. Ezekiel makes amazing sprouted grain products as well.

If you are super sensitive to gluten and gliadin review the chart below to see what grains you can handle and what grains you can’t.

Yogurt

Stonyfields – Some of the Stonyfield yogurts have a lot of sugar so read the labels if that is a concern for you.

If you are dairy-free try whipping Three Trees Pistachio Milk – it is amazing and flavorful
