Gluten Free Banana Bread

Ingredients

6 tablespoons butter, melted (this will make it really moist) – I like Kerrygold salted butter

½ cup organic sugar or honey

2 large eggs beaten

3 large ripe organic bananas

1 ¾ cups Pamela’s Baking and Pancake Mix – https://www.pamelasproducts.com/products/gluten-free-baking-pancake-mix

½ teaspoon sea salt

 1 teaspoon organic vanilla

½ cup nuts optional

Directions:

Preheat oven to 350 degrees. Beat together butter, eggs, sugar or honey, and banana. Add remaining ingredients and mix together well. Pour into a greased 8”x 4” or 9”x 5” loaf pan. I like to use primal foods or chosen foods avocado oil spray. Bake for 1 hour or until you insert a toothpick and it comes out clean. I start checking the bread at 50 minutes to make sure it doesn’t get too dry. Enjoy!
