Gluten Free Quiche
Ingredients:
8 large organic eggs – half of the eggs should be egg whites
1/2 cup shredded sheep cheese
1 cup cauliflower
½ tsp. sea salt
2 slices cooked free range bacon chopped into small pieces (optional)
1 cup sauteed spinach or asparagus (optional)
Cooking Instructions:
Preheat oven to 375 degrees
Steam cauliflower and then puree it in a blender
Add eggs to blender and blend on low
Hand mix in shredded cheese, bacon, and vegetables
Pour mixture into greased cup cake tins or an 8×8 square baking dish
Bake for 10-20 minutes depending on tin size and your oven
